Creamy Shrimp Penne Pasta
Oh man. Ok, you will find very few Seafood recipes on this blog. I am just not a Seafood gal. I wouldn't eat any of it till I was pregnant with my first. Then I craved Shrimp of all things. My husband was very excited about this. Luckily, my love for Shrimp Brochette continued past that pregnancy along with the next two.
Cooked Shrimp

I have tried twice to cook Shrimp on my own at home and just could not bring myself to eat it. My husband liked it, but I admit to having some weird raw meat issues. So anyway, I don't cook Seafood. But I saw this Shrimp Pasta Dish on The Pioneer Woman's Blog and decided it was time to try again. I love pasta. I could eat it every night.
I am so glad I tried it. It was easy and YUMMY!! I loved it. I was able to eat it ok. I bet after a few more times cooking it I will scarf it down. LOL I know, I have issues. My husband loved it and said it needs to be in the rotation. And my 1 year old of all the kids loved it the most.
So without further adieu, here is Creamy Shrimp Penne Pasta (aka Penne a la Betsy)
1 lb. Extra Large Shrimp
Penne
3 Tbsp Butter (divided 1 Tbsp and 2 Tbsp)
3 Tbsp Olive Oil (divided 1 Tbsp and 2 Tbsp)
1 sm onion
2 cloves of garlic
A glass of wine (or 1/2 cup low-sodium chicken broth)
8 oz. can plain Tomato Sauce
1 C Heavy Whipping Cream
1 Tbsp fresh chopped Parsley
4 or 5 Basil leaves sliced
Salt
Pepper
Prepare Penne per package.
Meanwhile, rinse the Shrimp under cold water.
Heat a tablespoon of butter and Olive Oil in a skillet. Add the raw shrimp and cook for a few minutes till the shrimp turns a light shade of pink. Remove from heat and let cool for a few minutes.
Dice the onion. Dice the garlic.
Heat 2 Tbsp of butter in a large skillet. Add 2 Tbsp of Olive Oil. Add in the garlic and the onion and slightly saute.
Back to the shrimp. Chop up the shrimp into bite sized pieces and set aside.
Add a glass of wine to the garlic and onions. (or low-sodium chicken broth if you don't like wine). Let the wine cook off for a few minutes. Now add the tomato sauce. Stir together well.
Pour in the Heavy Whipping Cream and stir.
Add the chopped up shrimp to the sauce along with the Parsley and Basil.
Now combine your Shrimp and Sauce mixture with your cooked Penne and enjoy!

Looks good but do you think it would be ok without the shrimp? Iggy won't eat shrimp at all.

It would still be good without the shrimp. You could even add some grilled chicken I bet.
