Easter Dinner

This is the Slacker's Easter Dinner.
Crab Rangoon
Roast in the Crockpot
Creamy Pesto Pasta

We had my MIL, FIL, my best friend's two kids and my family all for dinner. My MIL brought a green salad that was so good. Have I ever mentioned I could eat a green salad EVERY day. YUM! She also brought some asparagus and some strawberries. She made a strawberry pie with the kids. Dinner turned out very good. 

Here are the items I made tonight.

Baked Crab Rangoon
4 oz. cream cheese, softened 
1/4 cup mayo
6 oz. can white crab meat, drained and flaked
2 green onions thinly sliced
12 Won Ton Wrappers

Preheat oven to 350

Mix cream cheese, mayo, crab meat and onions in a bowl.

Spray 12 muffin cups with cooking spray. Place 1 won ton wrapper in each cup, allowing the edges to extend above the rims. Fill evenly with crab mixture.

Bake 18-20 minutes till the corners are brown and the mixture is heated through.


These were really really easy to make and were yummy.

Crockpot Roast
1 Roast
1 package of Lipton Onion Soup Mix
1-2 cups water
1 C baby carrots
1 C diced and peeled potatoes

I make this one w/o a recipe, so bare with me. Put your crockpot liner in. Then pour the water in. Put half the onion soup packet in and stir. Place the roast in and sprinkle the rest of the onion soup packet on the roast.

Cook on low 8 hours or high for 6.

After a few hours I add the carrots and the potatoes in the water around the roast.

Creamy Pesto Pasta
1 box/bag dried tri-color rotini or spiral shaped pasta
1 bag of frozen broccoli, cauliflower and carrot medley
12 oz. can of Evaporated Milk
2 C shredded Monterey Jack Cheese
3 Tbsp jarred or refrigerated pesto with basil
1/4 tsp ground black pepper
OPTIONAL - 2 C cooked ham cut into 1/2 in. pieces 

Cook pasta according to package adding frozen veggies last two minutes of boiling time. Drain

While the pasta is cooking, combine evaporated milk, cheese, pepper and pesto to a sauce pan and cook over medium low heat until cheese is melted.

Pour cheese sauce over pasta and veggies. (This is when you will add the ham if wanted).



So easy and very yummy.
