Cheeseburger Muffins

My lovely dear friend Shannon shared this recipe with me. I loved it. This was the first time I made it. The husband is out of town so I wanted something simple and easy for the girls. Plus he does not like corn bread. I was very excited about this for the girls.

HA! Only one even ate half of it. My oldest and my youngest did not like it at all. UGH! So not fair. But I liked it annd I will try it again. I was hoping to use this for new lunch ideas.

Cheeseburger Muffins
Jiffy corn muffin mix (plus 1/3 C milk and 1 egg per the box)
1/2 to 2/3 pound ground beef
1.5 C shredded cheese (I used cheddar)

Cook the ground beef
Mix the muffin mix, milk and egg in a bowl.
Stir in the cooked ground beef.
Add the cheese and stir real well.

Spoon into muffin cups and bake for 15-20 minutes at 400 degrees (till a toothpick comes out clean)

The one package I made ended up making 12 muffins.
